Description
Let’s talk pantry clichés for a moment. Georgians stockpile peaches in syrup. Idahoans keep healthy stores of big beautiful potatoes. Mainers revere their jugs of maple. But head north to Alaska and sockeye salmon is what you'll find on the shelves. At our remote island Cannery, we have our hands on everything from king to coho, but sockeye is a true taste of home.
At home on Prince of Wales Island, you’ll find entire pantries full of this red gold— jarred and canned, smoked or "plain pack," and always a gallon Ziplock or two filled with dry-smoked strips. With preservation methods dutifully committed to memory and passed from one generation to the next, many of us complement chest freezers full of fillets with a shelf-stable bounty, carefully harvested in just the right amount to sustain us throughout the winter.
So what makes Wildfish Cannery's Smoked Sockeye so unique? For over 30 years we've been the go-to custom smokery and cannery for the island's subsistence fishermen. To put it simply, we know how the locals want to eat it.
Tasting Notes:
Rich smokehouse flavor, brilliant red flesh. The essence of wild Alaska, in one bite.
Serve it up:
Sockeye’s brilliant red flesh is the star of the plate, the platter, or your favorite charcuterie board. Eat like the locals do, very simply, on a bed of steamed rice and a shake or two of Kelp Furikake. Mix with mayonnaise and spread on whole-wheat bread for a simple yet filling lunch. Add to fried rice, seafood soups, and chowders, or this breakfast frittata.

About the Brand: Wildfish Cannery
Nature provides perfection—we’re here to preserve it.
For over 30 years we've been carrying on the craft and time-honored traditions of the region in the small seaside town of Klawock, home to Alaska’s very first salmon cannery more than a century ago. Klawock, located on Prince of Wales Island in Southeast Alaska, has a population of just 796, most of whom consider fishing an essential part of life.
Wildfish was founded in 1987 by Phyllis Meuller, the local school bookkeeper who saw the community's need for custom seafood processing. Today, the reigns are held by Phyllis's grandson, Chef Mathew Scaletta, who is dedicated to melding his fine-dining background (honed in foodie paradise Portland, Oregon) with his family’s craft. So three generations in and we're still here, taking the best of our traditions and adding a "new school" touch. The exploration and excellence never stop.

Chilkoot Canoe Wildlife Safari Tour
Be amazed at Alaska’s striking beauty! Duration 4 hours About Paddle and motor on the gorgeous Chilkoot Lake and be amazed at Alaska’s striking beauty. Relax, take photos, and search for wildlife in the inlets and coves on this magnificent canoe adventure. Overview After a short tour of Fort Seward, a 30 minute drive from downtown Haines, leads us up the Lutak Inlet to the Chilkoot River Valley. The Chilkoot corridor offers incredible wildlife viewing. Brown Bears, eagles, mountain goats, and spawning salmon are commons sights. Our guides are expert naturalists and enjoy sharing their love and knowledge of the Alaskan wilderness. Once at the Lake, we’ll head out onto Chilkoot Lake in stable motor assisted Voyageur Canoes. Our Canoes are built using similar dimensions as the canoes used by trappers and gold miners at the turn of the century. Powered by either paddle or motor, this tour offers guests the opportunity to paddle in the serenity of Chilkoot Lake, while also having the advantage of relaxing and taking photographs when it’s time to take a break from paddling. We’ll be out on the water for about 2 hours and explore the inlets, coves, salmon spawning streams and numerous waterfalls that spill off of the mountains into the lake. After enjoying the beautiful views on the lake, we’ll return to Haines and serve a picnic-style lunch at a private ocean beach location at the end of the trip. ***Note:*** Though wildlife can never be guaranteed, bald eagles, moose, all five types of Pacific salmon, brown and black bears frequent the area. Wildlife sightings depend on the time of the year and area within Haines where the excursion takes place. Your guides will choose the best locations to help you maximize your wildlife viewing opportunity.
