About Cold Country Salmon
FROM OUR FAMILY TO YOURS
We are a small scale fishing operation working the crystal clear blue waters of Southeast Alaska. Local owner/fisherman Zac Culbertson lives just outside of Charlottesville where, when not fishing, he runs a small acreage family farm. Every June we head to Elfin Cove to fish on the coves and bays of Southeast Alaska. Our season lasts from mid June until the end of August with the peak occurring in Mid July. During the peak we often fish for 2-3 days straight without stopping. While we fish we are constantly selecting the very best of our catch to bring home to sell to our local customers throughout Virginia and D.C. at our farmers markets and local deliveries and with our expansion into a new storage and shipping facility we can now ship our fish to any address east of the Mississippi.
BEYOND SUSHI GRADE
The fish that we select are immediately bled on board our boat, filleted and packed in ice. On shore we immediately package and freeze our salmon in Pelican, Alaska. This very special handling process is what sets our fish apart from any other wild caught salmon available on the market. Literally nobody in the industry has such exacting standards. This is why we designate our fish as "Beyond Sushi Grade". Wild Caught Salmon from large retailers generally passes through large-scale commercial processors who don’t adhere to these exacting standards resulting in lower quality fish.
SUSTAINABLE FOR YEARS TO COME
The state of Alaska mandates that all fisheries be sustainable, and biologist managed to ensure its future viability. Farmed fish is categorically banned throughout Alaska to prevent the pollution of not only the coastal watershed but the wild salmon genome.
BEYOND SALMON
In addition to our superior King, Sockeye, and Coho salmon, we are able to supply our customers with several line caught species of fish including: sablefish, halibut, pacific cod, and pacific rockfish, caught by a small community of fishing boats out of Elfin Cove. In addition to our raw seafood we offer local Virginia seafood and local artisan foods like beef, bison, lamb, pork, coffee, desserts, vegetables, oils specialty spices, sauces and adult beverages to complement your meal!
