The Chef and the Owner of the Historic Skagway Inn & Alaska House Restaurant, located on the notorious Gold Rush era “Paradise Alley”, share how successful food preservation technologies from the time of the Gold Rush are still used today and show you modern cooking skills - an artful blend of the old and new. Get a behind-the-scenes look at organic gardening in the Inn’s kitchen garden. Understand the science that transforms garden and seafood items into delicious meals. Uncover the local secrets of Alaskan organic gardening and how to prepare, cook and preserve local food favorites. Our Cordon Bleu chef shows you the tips and tricks of professional knife skills, and teaches you to be an expert in selecting and using the best knives. His insights for cooking and preparing food are easy to apply in your own kitchen! You will learn how to smoke Alaskan halibut or salmon, learn how the sun and temperature affect greens grown in our Northern Garden and peek into making sourdough bread as part of the Alaska food story. After all the learning you will enjoy an individually served tasting of smoked fish, vegetables from the garden, sourdough bread and finish up by making (and eating) home-made ice cream! You will conduct three experiments that include smoking (and tasting) Alaska Salmon (an ancient form of preservation) using purple cabbage to determine pH of foods and making your own ice cream dessert. This unique experience will give you the skills to bring your Alaskan food favorites home.

Taku Lodge Feast & 5-Glacier Seaplane Discovery

Shortly after your arrival, the aroma of fresh Wild Alaska Salmon tells you the feast is about to begin. Marine Wildlife Tour
Here, on the extreme western edge of the primeval Tongass National Forest, stretches the mighty Gulf of Alaska and the nutrient-rich waters of Sitka Sound. This is an amazing place...one that is literally teeming with wildlife! Whales, sea lions, seals, sea otters, porpoises and fish, as well as puffins, murrelets, eagles, brown bears and much more are our closest neighbors. Those interested in truly wild places and in photographing, listing, or simply experiencing the sights, sounds and smells of wildlife will be absolutely delighted with our trips. Three and four-hour excursions, as well as other more extensive trips, are available. Join us for up close and personal whale watching and bird watching. On our four-hour trips we routinely visit Saint Lazaria Island National Wildlife Refuge, the "center of the universe”, in my mind! Here we immerse ourselves amongst incredible congregations of seabirds, as well as birds of prey, colorful inter-tidal organisms and marine mammals all in the setting of a dramatic volcanic island, steadfast, at the edge of the wide pacific and in the shadow of majestic Mount Edgecumbe. For those who love the natural world, especially bird watching, Saint Lazaria Island, with its surrounds, is a pinnacle of perfection!

While traveling through wildlife-rich waters, your captain will choose a remote beach upon which to bring you ashore. Upon arrival, our experienced guide(s) will let you know what to expect, and give you tips for spending the day safely in the Alaskan wilderness. Then, we’ll hit the trails in search of Talkeetna’s/Chugach's finest ingredients. Depending on the season, we could uncover wild greens, edible wildflowers, fiddlehead ferns, fireweed shoots, mushrooms, berries, and so much more. All of which, we have the opportunity of taking back to the campsite for education on how to prepare, cook, and eat using backcountry equipment and supplies. Musher's Camp & S'mores Roasting
Are you a dog-lover with a sweet tooth? Then this tour is for you---join us on the best family-friendly tour in Alaska! The tour begins with an informative ride up to our camp in Dyea, where you will be able to meet our star athlete sled dogs and their puppies. Then, take part in listening in on a Musher Presentation to learn everything there is to know about dog sledding and its history. After, enjoy roasting s’mores around the campfire and exploring our picturesque surroundings in the forest. Your journey begins with an entertaining historic tour from your knowledgeable guide through downtown Skagway and along nine miles of stunning coastline to our Adventure Camp in Dyea. Kick off your visit with what we like to call a “Musher Talk.” In the Musher Talk, we will share fascinating information about dog mushing and welcome any questions you may have. Of course, we make sure you have plenty of time to meet some of the professional athletes who compete in this amazing sport---our sled dogs! We also have litters of puppies that are ready for cuddles and kisses. After that, you may enjoy some time around the campfire and roast marshmallows with your guide to create the perfect s’more. After indulging in your delicious campfire treat, you will have time to take a self-guided nature hike next to a beautiful waterfall and dense Alaskan forest or browse the gift shop and relax in our saloon with a deck overlooking the picturesque stream. Cook Your Catch Wilderness Dining
This is a bottom fish excursion where you will be fishing at depths of 100-300 feet for Rockfish and Cod. The excursion is operated in a 23ft open air skiff that accommodates a maximum of 6 passengers. After fishing for 3-4 hours, your party will arrive at our remote campsite where you will have a meal featuring your catch of the day. Guests are also served our delicious blueberry-rhubarb bread pudding for dessert, which is also prepared at camp. We provide tea, coffee, water sodas, a covered area to relax and iconic campfires. Our private campsite allows you to explore Ketchikan’s old growth forest and rocky beaches before and after your meal, giving you the chance to soak in the beauty of Alaska’s wilderness. Our culinary adventures give you a taste of all we have to offer. Enjoy a genuine Alaskan tradition as you have your catch prepared for you by our chef on a wilderness beach, at sea, or at a private table at the Alaska Fish House. 1) Cook Your Catch: Wilderness Dining Baranof Excursions has a remote campsite on a wilderness beach south of Ketchikan, ready for your arrival with your fresh-caught fish. Pull up with your guide in one of our boats, and step ashore to meet our campsite host. In just a few short minutes, we’ll quickly cook up a fresh bouillabaisse featuring your catch for you to enjoy in the comfort of a crackling beach fire, accompanied by beautiful views of the rainforest and the wild, rocky shoreline of our private beach. 2) Cook Your Catch: Private Dining At The Alaska Fish House On arrival back to town, our guides will lay out your fish at our fish cleaning station and help you determine which fish you want to eat and how to prepare it to best meet your culinary desires. Once you’ve made your choice, we’ll run your fresh catch-up to our chefs in the Alaska Fish House. By the time, you’re done taking your raingear off, washing your hands, and getting back into your civilian clothes, we’ll have a private table ready for you in our rustic-style dining room, and an expertly prepared meal on its way. Once you’ve settled at your table, enjoy a cold, Alaskan-brewed Denali beer or a glass of wine to accompany your meal and give yourself the chance to relax into an authentic Southeast Alaskan dining experience. (If you'd like, we encourage you to invite your family members that you left in town, and share in your catch). Be it maple-glazed salmon served on a bed of rice and locally-harvested sea asparagus, crab-stuffed halibut baked with finely sliced onions and garlic, battered and fried lingcod dipped in a homemade tartar sauce, or a pile of prawns grilled to perfection, you’ll find the locals eager to share the bounty of our oceans. And, trust us: there is nothing—and we mean nothing—that compares to the taste of fresh-caught fish prepared within just hours of the catch. Legends & Lies
Travel back to those bygone days and experience life in a Gold Rush saloon. The Legends and Lies Gold Rush Saloon Experience takes you back in time to the wilds of Alaska circa 1897. The Klondike Gold Rush was going full fury with more than 100,000 stampeders on their way North to find gold and glory. The saloon was a vital part of life for the stampeder, the place to get news, make deals, play cards, and find companionship. Skagway boasted 80 saloons in a town only 10 blocks long. Skagway was a boom town full of hope, despair, and drama - all played out in a saloon! You'll learn to make classic stampeder libations, beverages that warmed the hearts of the prospectors, both the lucky and the downtrodden. You will use ingredients straight from the Inn's culinary garden and make two different traditional drinks (with a choice of alcohol or no alcohol recipes.) As you sample the beverages and nibble on an array of snacks including salmon or cheese quesadillas, halibut mini-cakes, chips with homemade rhubarb salsa, and reindeer pig-in-a-blanket, you'll hear stories, fact and fiction, and music played on an upright piano. Finish with a Prohibition era Shrub and Iceworm toast to your willing or unwilling induction into the great Order of the Sourdough.

Juneau Whale Watching & Tracy's Crab Shack Combo Tour
For this Juneau shore excursion, you're whisked off to the boat harbor for a 2 hour on the water guaranteed whale spotting. On-board our custom-made whale watching tour boat, you'll enjoy our wide viewing windows in a heated cabin and yes, there is a 'head' for your convenience. Once our informative and delightful captain spots the whales, the boat slows and out you go on our spacious decks to watch these beasts in their natural summer habitat. Your Naturalists' commentary is full of information about our Humpback whales and other possible wildlife such as Stellar Sea Lions, Dall's Porpoises, Bald Eagles -and just maybe you'll see a transient Orca whale. Our humpback whales come to feed in our cool, rich waters near Auke Bay for the summer. Although we guarantee a whale sighting, we can't guarantee what the humpbacks can do - But, you will be delighted if they tail-slap, head lunge, breach, or gather for bubble-net feeding. We then drop you off right in front of Tracy's crab shack! Bon appetit!
